Peanut Butter Apple Cake

With layers of sweet apple cake and a rich peanut butter frosting, this cake is a perfect way to ease into fall baking.
Serves: 12 servings
For the cake:
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs, at room temperature
  • 1 cup whole milk
  • 3 cups peeled and diced apples
For the peanut butter frosting:
  • 1 ½ cup peanut butter
  • 1 cup unsalted butter, at room temperature
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup plus 2 tablespoons heavy cream
  1. Butter 2 8” cake pans, line with parchment paper, and butter the parchment paper. Preheat the oven to 350°F.
  2. Toss the apples with ⅓ cup of the flour in a medium bowl and set aside.
  3. Whisk together the remaining flour, baking powder, cinnamon, and salt.
  4. In a large bowl, use a hand mixer to beat the butter on medium-high speed until light and fluffy. Add in the sugars and beat for 2 minutes more.
  5. Add the eggs one at a time, beating for 30 seconds after each addition. Add the vanilla.
  6. Switch the mixer to low speed. Pour in half of the dry ingredients, followed by the milk and then the rest of the dry ingredients. Be careful not to overmix.
  7. Stir in the apples with a rubber spatula.
  8. Divide the batter evenly between the two cake pans. Bake for 45 to 50 minutes, until golden brown and a tester inserted in the center of a cake comes out clean. Cool the cakes in the pans on a wire rack for 20 minutes before turning out and cooling to room temperature.
  9. To make the frosting, put the butter in a large bowl and beat with a hand mixer on medium high speed until light and fluffy. Mix in the vanilla extract. Add the peanut butter and beat to combine. Add the powdered sugar one cup at a time, mixing it in completely before adding in the next cup. Pour in the heavy cream and whip to combine and until the frosting reaches spreadable consistency.
  10. To assemble the cake, split the cakes into two layers each. Spread a thin layer of frosting between each layer, and spread it around the sides with a bench scraper or offset spatula. Garnish with apple slices and peanuts, if desired.
