Apricot Ginger Mini Loaves

These apricot and ginger mini loaves are a little spicy, a little sweet, and a perfect snack.

Ingredients
  • 2 cups all purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • 1 stick butter, at room temperature
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 tablespoon grated fresh ginger
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup greek yogurt
  • 1 cup chopped fresh apricots
Instructions
  1. Butter three 6” by 3” mini loaf pans and preheat the oven to 350°F.
  2. In a medium mixing bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, and ground ginger.
  3. Put the butter in a large mixing bowl and use a hand mixer on medium-high speed to beat it until light and creamy, about 2 minutes. Add the sugar and brown sugar and beat another two minutes, until thoroughly combined. Add the egg and vanilla and beat another minute.
  4. Add half of the dry ingredients and mix on the lowest speed until just combined. Repeat with the greek yogurt and the rest of the dry ingredients, being careful not to overmix. Stir in the chopped apricots by hand using a rubber spatula.
  5. Divide the batter evenly between the three pans. Bake for 30-35 minutes, until the tops of the loaves are golden brown and a tester inserted into the middle of a loaf comes out clean. Let the loaves cool in the pans for 10 minutes before turning out onto a cooling rack. Serve warm or at room temperature.
