Mushroom and Goat Cheese Tartlets

These easy and elegant tartlets have mushrooms, caramelized onions, and goat cheese, all in a simple puff pastry cup.
Serves: 12 pastry bites
  • 4 tablespoons unsalted butter
  • 8 oz sliced mushrooms
  • 1 yellow onion, diced
  • 2 oz goat cheese
  • ½ sheet puff pastry, defrosted
  1. Preheat the oven to 350. In a large skillet, melt the butter over medium-high heat. Add the onions and mushrooms and cook until the onions are lightly brown and the mushrooms have released their liquid and most of it has cooked off, about 8 minutes.
  2. Place the puff pastry sheet on a lightly floured counter and roll it out into a large rectangle (you won't need to roll it too much). Cut the pastry into 12 equal squares, then place them carefully in the muffin tin. Fill each cup with the mushroom-onion filling, then sprinkle the top with goat cheese.
  3. Bake for 12-15 minutes, until the puff pastry is golden brown.
